#33 THINK TANK EXPERIENCE :: London Study Tour

March 7th, 2012

View Larger Map

Ahh… London. Heaven on Earth for Foodies. There is really nothing better (in the world) for a global palette and an assortment of flavors. Funny that the stigma is still that London has crap food – and we will take it as it is the best kept secret!

We tried to pull together a comprehensive list of the best places to visit in the whole of London, but it was challenging to pick one area, so we decided to pocket the city into locations which would be worth venturing to. Everything from convenience, small grocery, fast and casual dining, incredible dinners out and event-specific places are listed below. London is known for the ‘Local Chain;’ there are lots of small chain restaurants all over London that don’t expand beyond the city. There are certainly other highlights all around the city, but these are many of our favorites and we think the BEST OF LONDON experiences, mostly around food. Have at it kids… and let us know what you think! Contact us

Thank you to our TILT friends: Jason Pinto, Andrew Sundling, Jack Middleton, Monica Bjorklund, Luca Maclennan, Anthony Snead, Eddie Stableford, Surrinder Chera, Tania Hill and Dan Carter for their incredible help in sharing their favorites around the city.

We started in the North and then went around the whole city. If you are running or biking, this would take you quite a bit as it is about 30 miles, but it would be a fantastic trip, and probably the most efficient way to go. Now with the Barclays Bikes, it would be a piece of cake to rent if you are visiting! If you are driving, you will follow this path, and if you are taking the tube, just go to the closest station and then wander.

#28 THINK TANK TRAVEL EXPERIENCE :: Boston Study Tour

February 29th, 2012

View Larger Map

This history of Boston is based around Irish Pubs, fresh lobster and seafood, the Boston Tea Party and the incredible Montreal-based concept Marche Movenpick which closed down in early 2000s. Currently Barbara Lynch is taking on the scene and outfitting the city with the most incredible new concepts. One made it into our tour (see below for more information). It is a city that gets the sun and at 5pm on a Friday it is truly the place to be, out in the streets, taking in the sound, and of course the smells.

Here are some of the concepts we have in our running tour of Boston, which will hopefully inspire and you to run the streets of Boston in search of the latest and greatest restaurant concepts. This is a 3.5 mile return run, and we hope it will give you lots of ideas!

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

Did you know Boston is home to the American phenom Dunkin’ Donuts? That’s right! This brand, founded in Quincy, MA around 1950 has been a huge part of the history of the American diet. This is a great store and a recommendation for anyone – even if you have seen a Dunkin’ before.

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

One of the countries best models for grab n’ go soups and salads, ABP prides itself on fresh is best. Always have and always will. Their Boston roots help to establish their love and passion for the busy lunch crowd with the locals. In recent years they have really moved into Contract Catering and supply their soups to many institutions around the world. They are also a common space to see in busy airport terminals.

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

Flat White and Flat Black are common drinks of New Zealand and Australia. All over the UK, Flat Whites are the drink of choice, even being supplied by every local Starbucks. On a trip last year with a friend from the UK, they struggled to find their drink of choice, so we did some research and found an incredible cafe with just that kind of coffee. This quaint little NZ cafe is brilliant and in the heart of one of the busiest business districts in all of Boston.

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

The first time we worked on a Boloco was for a Denver airport proposal in 2004. No surprise that this brand is still going strong and it is a Chipotle-style burrito concept. Local food, delicious wraps with a fun and friendly atmosphere. It is certainly along the lines of a Chipotle style concept.

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

Barbara Lynch developed this incredible evening bar called Drink below her Sportello restaurant near the water in downtown. It is a fantastically quirky display of clever medical tools and insect diagrams for the decor with glass display tables. It is in the basement of her building, but worth the journey down under to see what is going on! Upstairs Sportello is a locally-based diner concept with tiled walls and great metal lights. $30 a meal, but so worth the experience.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

This college age fabulous Uni bar is all about making food better for the student culture. Located in young-adult areas, UFood Grill is all about eating healthy quick food. Why aren’t their more places like this in the world? Their mantra is  – It’s the beginning of a food revolution, and UFood Grill is leading the way.

::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

This great concept is all about local and sustainable burger choices. It is quick and easy to pick off the menu and it is a very popular restaurant in Boston for local and fresh food. Started by two local folks and the food shines through the brand. Similar to a quick burger place like Five Guys… Four Burgers is much more local and friendly.

#23 THINK TANK TRAVEL EXPERIENCE – Paris Study Tour

November 2nd, 2011

Good morning, beautiful PARIS! Today is the day for a fantastic run throughout the city, seeking the best of the best restaurants, petrol stations, convenience stores and grocery spots. At only a mere 13km, you can walk it, run it or bike it very quickly – within an hour or so. My feeling is that the best tour of the city happens through movement and being on the go, the way these restaurants are meant to be seen.

Some say the city of love, others say the city of lights, but to TILT, Paris is the city of food; delicious, whole, healthy and untainted, the food experience in Paris like non-other in the world. The experience has a lot to do with service and quality of food and you pay a premium on it. Maybe a bit unpractical for the American and British Tourists who expect an exceptionally large portion, quickly and cheaply.

If you have the time, jump on the Eurostar from London and just head off on a tour of Paris for the day. Experience a smattering of fine concepts and brands that might be coming to you, someday. Parisian concepts may or may not be applicable in other places… the jury is still out, but we want YOU to make the decision for yourself and experience all the city has to offer. Below we have provided a map and a list of some of our favorite concepts. Enjoy!

View Larger Map
:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
JOOSBAYOO

Joosabayoo is one of the coolest and freshest new concepts we have seen in a long time. It is bright and clever with the marketing and messaging, but mainly the design is functional! It is totally focused on a quick, grab n’ go food bar with fruit juices and a lovely, modern atmosphere.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

COJEAN

One of the companies that we really want to work with is Cojean in Paris. A really great, fresh food company with roughly 20 or so cafes in and around Paris. They have a commissary kitchen and make fresh food every day and their primary sales time is from 11am-2pm. The company culture is very focused on their employees and quality food.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

MCDONALD’S
The French McDonald’s is the second largest market for the McDonald’s enterprise. With quality ingredients, a higher caliber of manufacturing methods and better portion control, it is a creative change from the typical McDonald’s. The most impressive is the walk-thru experience which looks like an ATM.
:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
QUICK

These uber fun and clever spots are completely equip with marketing and lead in markers. The design is fresh and clever, approachable and easy to navigate. The French burger favorite – Quick Restaurant is here to stay and competes on every level with the usual US versions.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
PICARD
What a cool space! Definitely one of the most interesting concepts we have ever been to. Picard is a frozen food phenonmenon in the heart of Paris. Similar to a Costco, this has a ton of bulk food, but nothing is fresh – it is all frozen. Get suited up for a party with some of the beautiful pastries, or just have an every day soup.
:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
MONOPRIX

We found Monoprix on a study tour we went on with Insight Research two years ago. The basement grocer is in the bottom of the Monoprix department stores and is a full grocery opportunity, complete with all the walks of life that we have grown to love and use.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
MONOP

Monop is the lunch spot for Monoprix. The baby-sized version sits in and around Paris in busy business lunch areas.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
FAUCHON

One of the best experiences in Paris is seeing the french pastires and food in and around the city. Fauchon maximizes the French potential for beauty and grace with their food design and has everything from quality meats and drinks all the way through to signature pastries. Their Fauchon graphics are everywhere and it is fitting with the high-end styling of a Parisian clothing brand.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
TEA BY THÉ

A fresh and comfortable cafe concept, set in the heart of the city, Tea by Thé. Their own tea brand is available on site for purchase or consumption. You can sit in alley chairs outside or indoor on a smattering of different furniture choices. Absolutely beautiful.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
CARREFOUR

Carrefour City is an exceptionally well known brand around the world, but the Parisian version is made for a city-sized version. It is suited up to provide a quick smattering of daily foods needed.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::
POMME DE PAIN

Sandwiches are the go to food for any Parisian. Toasted bread and delicious sandwiches can all be found at Pomme de Pain which is a simple, on-the-go place to go on your way to work or out for lunch with a colleague.

#18 THINK TANK TRAVEL EXPERIENCE :: Schiphol Airport

October 26th, 2011

The Schiphol Airport in Amsterdam is a sight to see. One of the most beautiful airports in the world, it is built with the future in mind. Many fly through the airport by choice just to experience the exceptional restaurants, world class customer service and the incredible technology.

Schiphol World Avenue, in the center of the airport offers a wide range of food service outlets, where you can grab a fast snack or stop to enjoy a fresh-brewed cup of coffee.

The outside concept space is just about to launch, but the sitting areas throughout the terminal really give way to new ideas with the interior design meant to look like an outside space.

#8 THINK TANK CONVENIENCE :: Sheetz

October 12th, 2011

Sheetz has grown out of the farming community and now is spanning the East Coast. There is a tremendous number of trucking locations so the space is truly built for size… MASSIVE. But Sheetz defies all logic for the location it caters to. The concept feels branded and for convenience it is totally outside the box. No one would expect this kind of design because the community doesn’t demand it… digital ordering, pump messaging, clever food products, a full barista, etc. Welcome to the evolution of convenience…

…and it works.

A typical convenience brand feels piecemeal, not like a total comprehensive brand. Most other brands are collaged; a little disjointed and a smattering of other brands on the shelf. Sheetz has this element too, but with a facade of clever and sophisticated ‘smoothing’ techniques mastering the illusion of cohesion. But that’s not all. This company is all about great design with exceptional quality behind it.

Beyond just the wow factor, the customer truly wants the Sheetz brand. It is sought after in their market and competes happily with the likes of WAWA, Royal Farms and BP. It is a movement. After 50 years with the same operator – Steve Sheetz (the founders brother) – it is a force to be reckoned with and is one of the worlds fastest growing non-franchised convenience stores.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

Technology at its best. No one would believe Sheetz stems from Central PA with the clever pump online MTO ordering system or the kiosk ordering system inside the facility. There are a lot of ideas for how the brand can expand forward using technology and they are constantly implementing with over 400 stores in 4 states… improvements are always underway!

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

The Sheetz brand doesn’t just stop onsite. It extends beyond into their trucking fleet and their promotional efforts in their customers home. Using clever messaging on the back of their trucks and their on-the-ground food truck, there is always a presence of food and the brand throughout.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

The new conceptual Sheetz food products are a great expansion of the brand. Great coffee and excellent wraps and pastries will now have a potential new look! Already a big following amongst their customers, this will only increase the market and keep their customers intrigued about the next step.

:::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::::

OUR BIG IDEA

There are so many ideas here, but ultimately we think that Sheetz could hit a bigger city market (downtown Harrisburg or possibly Philly and Baltimore) with something like a Sheetz Metro (similar to a Tesco Metro). Quick, small and easy with a limited offering, this could be just what the doctor ordered. Another area of focus could be a signature item that you can only get at Sheetz… RTD or signature element. Something that the customer craves, latches onto and wants more of… an Own Brand Product.
